Egg Muffin Quaker Muffin Mix- No Egg, What Can I Use Instead?

1 whole egg (3 tablespoons or 1.7 oz)
2 1 / 2 tablespoons egg substitute powder 2 plus 1 / 2 tablespoons water
O 1 / 4 cup liquid egg substitute
OR 1 / 4 cup mashed silken tofu
OR 3 tablespoons mayonnaise
Or half a mashed banana with 1 / 2 teaspoon baking powder tea
OR 1 tablespoon powdered flax seed soaked in water 3 tablespoons

About 1 / 4 cup mayonnaise with a teaspoon of sugar to offset the vinegar with the mayonnaise. You can also use applesauce or sour cream.
